Cake Network Competition

COMPETITION
A lot of discussions, have been going on the CAKENETWORK and we decided to hold our
1st competition which started on the 5th day of August 2014 with submission of entries.
The theme is of our competition was: kids cake: and entries closed 9th August 2014. The Rules were:
• It will be screened based on creativity, neatness and interpretation of design.
• It must be your original design
• Only 2 entries(cake picture) per person. So many beautiful pictures were sent in from across Nigeria for the competition.it was a beautiful display of creative works of arts in cake.

A CROSS SECTION OF ENTRIES

After the closing for the submission of entries on the 9th day of August 2014,the pictures were then screened out by our  able judges Mrs Ferhinti Adeboale of SUGARMAGIC LTD Gbagada Lagos and Engr Mrs Edith Ozumba of Acabado cakes Festac Lagos makers of FONDANTE.

Only 6 entries made it to the final round for voting.

After voting the picture with the no 5 emerged our winner.

He won our prize: A PATCHWORK CUTTER,N1500 MTN RECHARGE CARD AND 2 PACKETS OF FONDANTE.
MEET OUR JUDGES.

Her name is Mrs Ferhinti Adebowale CEO SUGARMAGICA member of the international Cake exploration society in America. I have attended various exhibition organised by the British guild .united Arab emirates. Ices America did some training in Canada etc. I am a representative of the world trade center and also a representative of international center for culinary arts united Arab emirates. She sells designers stencils and other Cake decorating materials.

Engr Edith Ozumba. CEO Acabado cakes, acabadoonlineschool and FONDANTE ltd. A sugar artist with experience and vast creativity of over 17 years. Read chemical Engineering university of Lagos. Woman, wife, mother, mentor and inventor.

WHAT IS CAKE NETWORK?

Cake network is an online group initiated by Bake ‘U’ Happy on the 26th day of July 2014. Its a group where CAKERS meet online via mobile devices to share tips,tricks and techniques in order to enhance our skills. Banking a Great Cake

 BAKING A GREAT CAKE

Have you wanted to bake a cake before and looked for a recipe only to find out the measurement given is in cups?

Many would wonder how to go about it and get a great cake. The truth is there are actually conversion tables on the net and in many cook books and if you’re observant you’ll notice there are discrepancies in the conversion tables.some conversion tables would give you a cup of flour as 120g and another would give the same cup of flour as 140g. i would advise you stick with either cup measurement or measure by weight that way you get exact quantity.though i prefer to measure by weight using a scale because that way i’m sure today,tomorrow or next year my cake or pastry is the same

here are two tips to help baking by cup measurement:

1.     to measure flour spoon flour into cup and level with a knife or spatula.

2.    ,for fats(margarine,butter,shortening)spoon into cup and pack down firmly with spoon or spatula

  • when baking a cake and a recipe calls for butter you can substitute for margarine but please use a hard margarine and not a bread spread  as the latter has more water content which affects the end quality of our baked goods
  • always  read your recipes thoroughly before you start.
  • when substituting remember some ingredients alter the final product e.g substituting cream for milk not only adds fats to the baking but also water
  • butter/margarine and sugar should always be mixed very well until they are pale,light and fluffy
  • always use a cake flour when baking cakes hmmmh those of us in Nigeria would ask whats cake flour(a cake flour is a flour with a weak protein structure)truth be told what we have in our market is not even an AP flour.***to get lighter cakes here i’ll advise you reduce your flour by 25g and add corn flour to it.
  • always line your cake pans
  • for fruit cakes don’t forget to sieve out the brandy that was used to soak the fruits and toss the fruits in flour before putting in cakes to prevent the fruits from sinking to the bottom.
  • bake cakes on low temperature that way you ensure the batter is cooked thoroughly.

Cake Tips

Hi everyone!

Its really been a busy week for me but the good news is i found some tips and i thought it so cool to share.

  • when baking cakes in order to get a good texture,add eggs one at a time and alternate with flour to prevent cuddling which tends to make cakes somewhat heavy,
  • when doing icing either butter icing or fudge icing its best to start from the sides and do the top last.
  • Remember to keep good hygiene and also keep your work area clean in other to prevent      poisoning.
